Warm Chocolate Melting Cake. Just hearing the name gets me excited. Why? Because it is by far the most loved dessert on Carnival Cruise Lines, and just thinking about its rich, chocolate-y gooiness (yes, I'm making up my own words here!) makes me want to cruise ASAP.
Normally, that would be the only way you could enjoy this decadent dessert-- BUT, I was lucky enough to get the OFFICIAL recipe from Carnival on my recent cruise aboard the Carnival Magic.
What makes the Warm Chocolate Melting Cake so special is its texture. While the cake looks firm on the outside, the inside is warm and fudgey; when mixed with a spoonful of vanilla ice cream, the combination is simply heavenly!

Hi! Yes, that dessert is to die for. Ok, just a couple maybe somewhat dumb questions. The sugar and flour, are those by weight? Or with a dry measuring cup. Also, what size ramekins do you use??

It's easy! – Using a spoon give you less control and I personally find it harder. Basically you drip the chocolate down the edge of the cake from the top and go right around the cake.Once you finish, you pour the remaining chocolate into the middle and spread it out with an offset spatula.
On the other hand, Carnival Cruise Line prohibits the use of e-cigarettes and vapes in all indoor areas and on balconies, but allows them in designated outdoor smoking areas.
Place over a medium heat and bring to a very gentle simmer. Place a heatproof bowl on top of the pan so that it fits snugly but doesn't touch the water. Lower the heat to a very gentle simmer. Break up the chocolate and add to the bowl, then leave to melt for 4-5 mins, stirring regularly.
The quickest way to melt chocolate is in the microwave. Simply place your chocolate in a microwave-safe bowl and microwave it in 30-second intervals, stirring between each interval, until the chocolate is smooth and thoroughly melted.
Wrap well in plastic wrap and store in an airtight container in the freezer for up to 1 month. You can thaw frozen lava cakes overnight in the fridge and reheat them in the oven at 350°F for about 8 minutes. Alternatively, you can reheat them from frozen in a preheated 400°F oven for 15-18 minutes.
Are Molten Lava Cakes served hot or cold? Chocolate Lava Cakes are served hot from the oven, with just a one to two minute rest before being inverted onto the serving plates. They must be served hot, otherwise, the molten lava centers will thicken as the cakes continue to bake and cool.
Coat in Flour: Before adding the chocolate chips to your batter, toss them in a little bit of flour. Just a light dusting will do. This helps to absorb any excess moisture and gives the chips something to grip onto, helping them to stay suspended in the batter during baking.
To thin melted chocolate, add a small amount of neutral oil, like vegetable oil or cocoa butter, stirring gently until it reaches the desired consistency. Melt slowly to avoid overheating, and keep water out to prevent the chocolate from seizing.
Adding melted chocolate to the sponge mixture gives it a fudgier texture, but you can leave this out and simply use the cocoa paste for a lighter (and cheaper) cake.
Whipped butter is seldom recommended for cooking or baking because it has a lower density relative to regular butter, not enough fat solid. Spreadable Butter is a blend of regular butter and vegetable oil (often canola). This combination is easy to spread when cold and has a buttery flavor.
Challenge Whipped Butter (available in both salted and unsalted forms) is regular butter with air whipped into it. It has a lighter texture and fewer calories per tablespoon. This product is solid at refrigerator temperatures and requires tempering to enjoy its smooth delicate texture.
If you're craving whipped butter to spread on your freshly baked bread, you can also create some at home as long as you plan to use it within a few days. Simply whip softened butter and a bit of milk with your hand mixer or stand mixer.
A ship that carries 3,500 passengers uses 600 pounds of butter per day, 250,000 eggs per week, and 170,000 pounds of fresh fruits and vegetables per cruise. Naturally, there are more hands on deck in the kitchen too.
