Honestly, that is pretty much how it works. But yes, the demo will give you a good idea of whether you'll like it or not. There is basically an "overworld" map which is light speed travel. Its blended very well with the game and it feels immersive so I would definitely call it a true open world.

Stay calm - panicking will often get you killed. Crafting consumables and secondaries and using them while pausing is very useful in fights. The Okkar that jump in after taking too long in a zone can drop fuel and occasionally credits, but otherwise they won't drop anything.

Regarding the grinding, it's a matter of perspective, the OP feels it's grindy and he presented his reasons. He thinks the game is too slow to gain certain levels and he presented it in a fairly manner. I don't think the game is perfect and there is a grindy element to it as well.
