Easy Lard-Free Tamales

If you’re wanting to make tamales at home but are short on time, this Instant Pot Tamales recipe is for you!

I grew up enjoying tamales around the holidays, especially on Christmas Day or Christmas Eve. It's a special tradition that I hope to carry on!

Now that my husband and I are hosting holidays and celebrations in our home, I wanted to learn how to make tamales from scratch.

They're fun to make and a family favorite. Plus you can't beat that savory fluffy bite.

Ingredient Notes

  • Masa: Make masa from scratch using masa harina, water, and vegetable oil. No lard, no problem!
  • Filling: Savory tamales can be filled with shredded beef, fresh green chiles, shredded chicken, tender pork, seasoned black beans, or even seafood.

How to Make Instant Pot Tamales

I have made these tamales on numerous occasions and feel confident in saying they're pretty fail-proof and forgiving.

Step 1: Cook your filling

Start by preparing your filling or multiple fillings. Tamales are commonly stuffed with pork, chicken, beef, beans, and cheese. Once your desired fillings are cooked, set aside.

Step 2: Make the masa

To make the masa dough, combine masa harina, water, and vegetable oil together in a small mixing bowl. Mix using your hands until a soft dough forms.

Step 3: Assemble the tamales

Next up, assembling! Prepare your workstation by laying out several dry corn husks along with the prepared filling and masa.

To assemble each tamal, use your fingers or the back of a spoon to spread an even layer of masa in the middle of the corn husk.

Arrange a small amount of filling down the center of the masa, then carefully fold the corn husks closed. Do this by pressing the masa dough together, then rolling the corn husk, and folding the bottom.

Step 4: Prepare the pressure cooker

Finally, get ready to cook the tamales in the Instant Pot! Place steamer rack in the Instant Pot and add about 1 cup of water.

Step 5: Steam the tamales

Place assembled tamales in the Instant Pot standing up. To cook tamales, secure lid of the Instant Pot and set the valve to pressure cooking position.

Set the timer to high pressure for 30 minutes, then allow the pressure to release naturally for 10 minutes.

If the masa looks undercooked, add a splash more water to the Instant Pot, and cook for an additional 10 minutes on high pressure.

Additionally, I like to let my cooked tamales sit for 10-15 minutes to continue to firm up.

To serve, unroll tamales from the husk and enjoy!

Storage Tips

  • Leftovers: Place leftover tamales in an airtight container and refrigerate for up to 5 days.
  • To freeze: Freeze tamales in a freezer safe container or bag and freeze for up to 6 months.
  • How to reheat: Warm them in the oven, air fryer, or microwave until heated through.

My masa was too dry so it didn’t spread well. Next time I’ll add a little more water or oil. Also my corn husks kept splitting. Did I not let them soak long enough? They are in the insta pot now so I’m excited to try them…..

Do you use any seasonings, I didn’t see any listed in recipe. I need to get a steamer rack for my insta-pot so I can try this.

Hi I was wondering how much of the mass dough I should put on each corn husk?

    • Jenna | The Urben Life

Hi Grace 🙂 Great question! I'd say to use about 1/4 cup of dough, then use your fingers or back of a spoon to spread an even layer of the dough in the middle of the husk.

Hi - by (the ingredient) tamal, do you mean masa? Isn't tamal the singular of tamales? I'm confused by what ingredients I need for this recipe!

    Reply

    • Jenna | The Urben Life

Sorry for the confusion, Laura! Correct, you will need masa harina. The brand I use Maseca, has two bags and one of them says Tamal on it. I will make a note of it in the recipe.

Hi Taylor, thanks for your comment! I have only used Maseca Tamal Instant Corn Masa Mix to make tamales.

Bob's Red Mill has an organic masa harina, that can be used to make tortillas and tamales. Here's a link to that, if you're interested in checking it out: https://amzn.to/2R36h0x

FAQs

What can I use instead of lard for tamales? ›

Vegetable shortening is a meat-free and dairy-free substitute for lard, allowing you to serve tamales to meat eaters and vegans alike. That said, there are other substitutes for lard that will work well in tamale recipes as well, like refined coconut oil, butter, and avocado oil.

How long do you steam tamales in an Instant Pot? ›

Stand tamales vertically, open-side up, in the steamer basket of the Instant Pot. Place the trivet in the cooker and add 2 cups of water. Place the steamer basket on the trivet, and close and lock the lid. Select high pressure and set timer for 20 minutes.

How to make tamales without an Instant Pot? ›

Alton Brown recommends steaming them right in a normal tall pot with a steamer insert (your typical expanding/contracting one many people have on hand), directly in their husks. Basically, you put a couple inches of water in, and then a steamer insert, and the tamales (in the husks) go on top of the steamer.

How do you cook tamales quickly? ›

Stovetop: Cook the tamales in a steamer pot for 15 to 20 minutes. This method is effective and retains the original flavor and texture of the tamales. Microwave: Wrap the tamales in damp paper towels. Microwave on high for 1-2 minutes, checking halfway through to make sure they don't get overcooked.

Do you have to use lard in tamales? ›

Pork back lard is preferable for its mild pork flavor, although more neutral-tasting leaf lard or vegetable shortening can be substituted.

Can you use oil instead of lard for tamales? ›

Masa for Tamales using oil instead of lard. I used olive oil, but you can also use canola oil or vegetable oil. 👍🏼 This is an easy recipe and the tamales come out delicious!

How long do you steam raw tamales? ›

If your tamales are frozen + raw, you'll want to steam them for 90 minutes. Check your water level every 30 minutes, and do not let the water run out! At the 90 minute mark, you'll want to check the internal temperature of the tamales to make sure it's properly cooked. You're looking for a temperature of 200°F.

Can I cook tamales in a pressure cooker? ›

Place tamales standing upright in steamer insert. Stovetop: Secure lid. Bring to high pressure over medium-high heat; reduce heat to maintain pressure and cook for 15 minutes. Remove from heat, quickly release pressure, then remove lid.

Is instant masa good for tamales? ›

Convenience is a big plus for me, so I opt for instant masa harina to make masa for tamales. Some brands like Maseca and Masabrosa have a variety of options to choose from. Their masa harinas made specifically for tamales have a coarser grind, which yields a masa with a bit of a gritty texture.

How to make tamales if you don t have corn husk? ›

Originally Answered: What are some ways of making tamales without husks? They won't taste exactly the same, but you can use parchment paper, wax paper, or aluminum foil. Really, if you make the filling sturdy enough, you can make “corn dog” like tamales, with no wrapper, kind of like pulled pork hush puppies.

How many minutes do tamales take to cook? ›

Then add a steamer basket, fill it with your tamales, and steam until the tamales are hot and cooked through and the masa separates easily from the corn husks, about 30 minutes on the stovetop or 20 minutes (high pressure, natural release) in the Instant Pot.

What are the two ways to cook tamales? ›

To get this, you'll need to steam the tamales in a large pot with a steamer basket. If you don't have a steamer basket, you can create a makeshift steamer by setting a plate on bunched up aluminum. You could also steam the tamales in a pressure cooker or Instant pot.

Why do you put baking soda in tamales? ›

Otherwise, you'll get grainy tamales that aren't as soft as they could be. Plus you'll see the masa expand and rise when the baking soda activates.

What is the best fat to use for tamales? ›

Lard, if you're using it, must be whipped into submission. One day I'm going to experiment with coconut oil, but right now my tamal fat-of-choice is lard — preferably very white, fresh lard. Vegetable shortening can work, too, although Chef Raúl says the tamales made with manteca vegetal overcook and dry out easily.

What is the best fat for tamales? ›

Lard makes tastier and fluffier tamales than other fats do. You can replace the lard with solid fats, like duck fat or shortening, to obtain a similar texture; butter and liquid oils work but will make a denser masa.

Do you have to use lard in masa? ›

Traditionally, masa is made with lard. It is used for both sweet and savory tamales – think pie crusts made with lard. Not a fan of lard or shortening? Try masa with oil.

Can you use oil instead of manteca for tamales? ›

Masa for Tamales with Oil

If you would like to use oil instead of shortening for your masa for tamales, it's no problem at all. Using oil is also a slightly healthier way of making tamales masa. Use vegetable oil and use 3/4 cups to 1 cup vegetable oil instead of the 1 cup of shortening used in my recipe.
