Delicious sweet potatoes are root vegetables full of nutrition. One cup of sweet potato cubes has 4 grams of fiber, plus potassium, vitamin A, vitamin C, and vitamin B6.
Since sweet potatoes are, well, sweet, it's a great way to get kids to eat healthy.

This sweet potato quiche recipe is great for families that are limiting their gluten intake. The crust for this quiche is made of sweet potatoes! I really love the tangy salty feta cheese with the sweetness of the sweet potato crust.

While apple pie and pumpkin pie take all the glory, sweet potato pie has all the same warm Fall spices like cinnamon, nutmeg, and allspice plus a creamy texture, too. This is another favorite sweet potato recipe my kids love.

Roasted sweet potatoes with rosemary are so good! I love adding a little parmesan cheese on top. These are quick and easy and make the perfect side dish any night of the week.
