If I had to classify the grilled cheese sandwich, I think I’d put it in the category of “comfort food.” There’s something about warm, freshly made grilled cheese that just puts me in a good mood. I’ve always loved cheese, and a grilled cheese sandwich is so easy to make. But you know what? Sometimes a traditional grilled cheese just doesn’t cut it. For those of you with more “refined” palettes, here are some totally non-boring twists on the classic grilled cheese sandwich. If these don’t get your mouth watering, I’m not sure what will!

1. Bacon Dill Pickle Grilled Cheese
You had me at bacon. The pickle I’m not so sure about. Don’t get me wrong, I like dill pickles on occasion, but with bacon? I’d be willing to give this a try just because I’m pretty sure any variation of grilled cheese would be yummy. Do you like the pickle and bacon combo? If so, this sandwich is probably going to become your new favorite.

2. Apple Gouda Grilled Cheese
Mmm…this is more my style. Even though I’ve never really thought that Gouda was very good-a, I bet it tastes great with apple. You can go with regular cheese or smoked, and this is basically made the same way as a standard grilled cheese sandwich is. It’s simple to make and simply delish.

3. Pizza Grilled Cheese
I mean, if you combine two of the greatest foods ever, what could possibly be not to love? With typical pizza ingredients made into a sandwich, this is pure perfection. When you want to try your hand at something homemade, but doing an entire pizza from scratch seems like too much work, this is a great alternative that even the kids will love!

4. Bacon Avocado Grilled Cheese
You had me at bacon…again. And this grilled cheese is made with avocado, so the guilt factor isn’t as high because that’s a healthy ingredient. With colby jack cheese melted into the avocado and bacon, you get a flavorful, crispy sandwich that only takes minutes to make.

5. Taco Grilled Cheese
Next time you’re in the mood for a taco, try this version. This is literally like making a taco in the form of a sandwich, so you still get your Mexican food fix. 6. Blackberry Bacon Grilled Cheese
Ok, blackberry and bacon is another flavor combo that I must question. I’ve never tried the two together, but it must be a killer team. Throw some jalapenos and Swiss cheese into the mix, and holy moly! This is fruity, this is gooey and it’s got a little kick. It’s like my children, in sandwich form!
