Before we get to the recipe, I just wanted to say that my worst nightmare came true a few days ago. I lost EVERYTHING! All of my pre-written recipes, ideas for future recipes and my photos. Gone. I haven't stopped crying since, as that was 2 years of hard work and creativity down the drain.

Being a teen, of course I live on my smartphone. So that's where I decided to write all of my recipes and ideas. Then I did something incredibly stupid without even knowing and ended up losing ALL OF MY HARD WORK!! Thankfully, I've already made some of my upcoming recipes ahead of time and I'm slowly beginning to remember a few of my future ideas. I'll just have to write them from scratch all over again, but I'll get through it.

And I WON'T be using my iPhone this time.

Now, back to the recipe that survived that train wreck.

This recipe is super simple to make and only requires 7 simple ingredients: tart shells + homemade salted caramel sauce + unsalted peanuts + chocolate + peanut butter + coarse sea salt + and of course, SNICKERS!

These little lovelies begin with pre-made frozen mini tart shells, which you will need to pre-bake before you turn them from dull to dazzling!

The best part of a Snickers bar is the caramel-peanut filling, so I just HAD to stuff these shells with some to imitate that gooey goodness. For the filling, I used my Homemade Salted Caramel Sauce. The caramel is incredibly easy to make and can be made ahead of time, but if you don't want to go through the trouble, you can use a jar of store-bought caramel. I recommend you use unsalted peanuts, since there's enough salt in the caramel. Or if salted caramel isn't your thing, you can even make a recipe of my Homemade Caramel Sauce and mix it with salted peanuts.

To tie everything together, I topped the caramel-peanut filling with a divine mixture of chocolate and peanut butter, which adds a lot to the Snickers flavour. Just melt some chocolate chips and peanut butter together, pour on top of the tarts, then lick the bowl clean. The last bit is optional, but highly recommended.

Now, what would a Snickers dessert be without, well-Snickers?! I chopped up some fun-sized Snickers bars and used them to top these beauties, along with more peanuts and coarse sea salt. Pop the tarts in the refrigerator for a few hours, take 'em out, then drizzle with more silky caramel!

Mini Salted Caramel Snickers Tarts! Mini pre-baked tart shells with a salted caramel peanut filling and a chocolate peanut butter topping. Finish it off with chopped snickers and more peanuts, and you have the easiest/most decadent and delicious, bite-sized dessert!

Ingredients

Crust:

  • 18 store bought mini tart shells

Caramel Peanut Filling:

  • 1 cup Homemade Salted Caramel Sauce
  • 1 cup unsalted peanuts

Chocolate Peanut Butter Topping:

  • 8 oz milk chocolate chips
  • ¼ cup creamy peanut butter

Garnish:

  • Mini Snickers bars, chopped
  • Unsalted peanuts, coarsely chopped
  • Coarse Sea Salt (optional)
  • Extra Salted Caramel Sauce, for drizzling

Instructions

For the Crust:

  1. Bake your mini tart shells according to package directions, set aside to cool.

For the Caramel Peanut Filling:

  1. Make one recipe of my Homemade Salted Caramel Sauce. Mix together 1 cup of caramel sauce with 1 cup of peanuts.
  2. Spoon caramel peanut filling into each tart shell, about halfway full. Set aside.

For the Chocolate Peanut Butter Topping:

  1. Add the chocolate chips and peanut butter to a microwave safe bowl and microwave in 30 second intervals, stirring after each until melted and smooth.
  2. Spoon melted chocolate on top of the caramel layer. Garnish with chopped Snickers, peanuts and coarse sea salt (optional). Transfer to the refrigerator to set completely, about 1-2 hours.
  3. Drizzle with extra salted caramel sauce if desired and serve. Enjoy!

Notes

1. You can prepare the salted caramel sauce ahead of time and store it in a jar in the refrigerator until ready to use.

2. You can use store-bought caramel if you desire.

3. If you want to use salted peanuts instead of unsalted, make my Homemade Caramel Sauce instead.

4. The recipe for both caramel sauces yield 1 cup, so if you would like to have extra for drizzling onto the tarts, I recommend you double the recipe.
